NOROHY has set its sights on Tunisia, and more specifically on Cap Bon. This region is located on Tunisia’s northeastern peninsula, near Nabeul. Tunisia is the cradle of the orange blossom, thanks to its ideal biotope. It is also the only geographical origin offering organic production in sufficient volumes. France is a much smaller producer. The flowers are picked from the sour orange tree in spring. Distillation takes place the night after harvest, to preserve all their aromas. A second distillation then takes place in France before bottling.

Floral water, like orange blossom water, is a photosensitive product. When exposed to light, some of its aromatic compounds are transformed, impairing its organoleptic qualities. To limit this phenomenon, we have chosen an opaque blue bottle rather than a transparent one. This coloration offers better protection against UV rays.

Floral waters such as Norohy organic orange blossom water are rich in water. This makes it microbiologically sensitive. So, to prevent mold formation, especially after opening, we add 0.1% citric acid. Citric acid is both a preservative and an acidifier, and is the only one permitted in organic products. This is because it is naturally present in citrus fruit. It does not alter the taste or smell of orange blossom water.

 

Over time, the Neroli essential oil in orange blossom water takes on an orange-brown hue. This normal process does not affect the quality oforange blossom water. You can use it in complete safety.

Orange blossom water is a microbiologically sensitive product. Exposure to heat increases the risk of microbial contamination. This is all the more true with an open bottle. To limit the risk of mold growth in the bottle, it is best to store the bottle at 4°C away from light, especially after opening. You should also observe the storage time before and after opening.

Traditional orange blossom water contains a minimum of 300mg/L of essence, according to current regulations. This means that there are 300 mg of Neroli essence per liter of orange blossom water. In fact, NOROHY has opted for a second distillation to concentrate almost twice as much of our orange blossom water in essence. As a result, the essence content indicated on the bottle corresponds to the Neroli essence content at bottling. It is therefore an indicator of the aromatic power of orange blossom water.

NOROHY has made a commitment to transparency by indicating the Neroli essence content at bottling on the bottle. This gives you an indication of the product’s aromatic power. However, Neroli essence is made up of volatile compounds. Once the bottle has been opened, the Neroli essence content oforange blossom water gradually decreases. To limit this natural phenomenon, close the bottle tightly after use. Store orange blossom water in a cool, dark place for up to 3 months to preserve its aromas.

Orange blossom water ‘s fragrance is derived from Neroli essential oil. Neroli essential oil contains natural volatile aromatic compounds that break down at high temperatures (170 to 200°C). So, in a cooked product, the aromatic intensity fades more than in a raw application. To limit this aromatic loss, you can readjust the dosage of your cooking applications. And don’t hesitate to use a soaking syrup or orange blossom glaze on your creations.

In France, the name is regulated by law. Thus, an orange blossom flavoring designates a flavoring, synthetic or otherwise, that reproduces the scent of orange blossom. In contrast, a natural flavor is obtained from a natural ingredient, not necessarily orange blossom. Finally, a natural DE fleur d’oranger aroma specifies that it is an aroma obtained from orange blossom. Orange blossom water is a hydrosol obtained from orange blossoms, so it’s a natural orange blossom aroma.

NOROHY organic orange blossom water is a natural liquid flavoring. It can be incorporated into your liquid preparations (eggs, creams, pasta, etc.) to give them a pleasant fragrance. NOROHY recommends adding 20 g of orange blossom water per 1 kg of preparation, for subtle gourmet notes.

Orange blossom water is particularly concentrated thanks to a second distillation process. So, add only 20 to 40g per kilo of preparation to perfume your recipes, depending on the desired intensity. NOROHY recommends that you increase the dosage for intense flavouring if you’re cooking at high temperatures (between 170 and 220°C). Don’t hesitate to enhance your baked creation with a soaking syrup, a glaze or a spray of orange blossom water droplets to reinforce the aromas after baking.

NOROHY has added 0.1% citric acid to its recipe to make it easier to preserve and prolong without risk to the consumer. Although this compound may occur naturally in lemons, it is an additive. In this sense, our orange blossom water is not a clean label recipe.
