The intensity of the work rhythm and the importance of controlling food costs are two key concepts in the laboratory. Aware of these major challenges, we make it easy to use vanilla in your preparations. Without sacrificing quality or aromatic power! NOROHY has developed a complete range of vanilla-derived products for you, the gastronomy professional. Vanilla extract or concentrate, vanilla bean paste, powdered vanilla beans or one-step single-use vanilla: let's explore vanilla in all its forms!

  • Vanilla extract

NOROHY offers vanilla extract, also known as vanilla concentrate or natural vanilla flavor. It is obtained by macerating vanilla beans in several baths of alcohol. The mixture is then decanted, filtered and evaporated, leaving only the fragrant oleoresin. For ease of use, this is then diluted in cane sugar syrup and garnished with depleted vanilla beans to flatter the eye. Vanilla extract is perfect for creams and mousses, but also for chocolate. Allow 20 to 40 g of extract per kilo of preparation.

  • Vanilla bean pastes

The NOROHY range of products derived from vanilla also includes two vanilla bean pastes. Available in the typical notes of vanilla from Madagascar or Papua New Guinea, they instantly perfume your preparations. The vanilla bean paste combines vanilla extract and vanilla beans in a ready-to-use paste. No need to infuse your beans, so you save precious time! And last but not least, you can easily measure out your vanilla bean paste with a spoon.

  • Vanilla powder

Another common laboratory use for vanilla is for powdered vanilla beans. Just 3 g of NOROHY’s particularly fine vanilla powder is enough to flavor a kilo of preparation. NOROHY’s organic Madagascar vanilla powder is ideal for use in dry pastas. Produced from non-depleted vanilla beans, it perfumes your preparations with woody, camphor notes.

  • Tadoka, one-step single-use vanilla

To make dosage even easier and combine the aromas of two vanillas, NOROHY has created Tadoka. The perfect amount of vanilla combines the aniseed and floral notes of Papua New Guinea vanilla with the camphorated, woody notes of Madagascar vanilla. Simply allow Tadoka to melt before adding it to your dishes. Restaurateurs can also create a “wow” effect in the dining room by grating a Tadoka nugget onto the plate as a topping!

Characteristics of NOROHY products derived from vanilla

  • Clean-label recipes

These products derived from vanilla are nonetheless raw ingredients, as natural as possible. In fact, our recipes use only the necessary ingredients. That’s why we call them “clean label” recipes. No preservatives, artificial flavors or additives are added. The composition of NOROHY vanilla products is limited to vanilla beans, cane sugar syrup and cocoa butter.

  • Advantages of products derived from vanilla

Over the years, NOROHY has forged strong links with both upstream producers and downstream chefs. This strengthens our approach in the field, enabling us to better meet your needs. As you can see, our watchwords in creating this range were aromatic richness, food cost control and ease of use. Our aim was to save you time without sacrificing quality. To achieve this, NOROHY has selected high-quality vanillas. We then co-developed this range of vanilla-derived products with renowned chefs. This gave us the opportunity to test our vanillas in application through multiple recipes. While the vanilla bean remains the star of the gastronomic world, vanilla-derived products are no less high quality. They are appreciated by top chefs for their aromatic complexity and time-saving benefits. In fact, vanilla-derived products enable instant flavoring, without the need to scrape pods or prepare an infusion. Moreover, these vanilla-derived products do not replace the use of vanilla beans, but rather complement them. For example, vanilla extract reinforces the woody, camphor notes of the pods for even greater intensity. Likewise, vanilla pods sprinkled over a dessert not only flavour it, but also decorate its surface. Discover them in our dedicated section!
