TADOKA smoky flavor is a Clean label recipe. This means that the list of ingredients is as short as possible, with no additives or preservatives. The recipe for TADOKA smoky flavor is limited to two ingredients:
- Sweet smoked paprika from La Vera (Carceres region – Spain). This is a PDO (Protected Designation of Origin) guaranteeing the origin and traditional know-how. Every year, a great deal of work goes into planting and transplanting the seedlings. The ripe fruit is then hand-picked and dried on the farm. A vertical current is then maintained by a lower hearth fuelled by oak wood. This method ensures slow, gentle drying that reduces the moisture content of the fruit. The dried peppers thus obtained are called shells. Their smoky aroma is highly stable, as is their color. Finally, the shells are ground to a powder in emery stone mills.
