Production of NOROHY coffee extract

The coffee extraction process chosen by NOROHY involves heating the water and then macerating the freshly ground coffee beans under heat. This dissolves the coffee's aromatic compounds. The extracted liquid is then concentrated and filtered. Controlling the temperature and duration of each stage is essential to obtain a coffee extract rich in aroma and concentrated in dry matter (over 40%!).

Applications and gourmet alliances

It's ideal for soaking cookies, but also for all your everyday pastries (opera, tiramisu, éclairs, ganaches...) or ice creams, saving time in the lab. Sugar-free, it can also be used in sensible pastries or savory combinations. NOROHY coffee extract offers an economical, instant alternative to coffee flavoring. Its clean-label recipe includes only coffee and water! Coffee can be used in a variety of ways, whether in pastries, chocolates or ice creams. It goes wonderfully well with chocolate, dried fruit, pralines, spices (cinnamon, vanilla...) and also honey and caramel. In cooking, it can also be combined with meats and fish, as well as sweet potatoes, carrots and mushrooms.

Dosage and directions for use

First of all, shake well before use to rehomogenize the dry and liquid components of NOROHY Organic Liquid Coffee Extract. After opening, store in its original sealed packaging, in a dry place away from light and heat. After opening, store at 4°C and consume as soon as possible. NOROHY organic coffee extract can be used in all types of sweet or savoury preparations. In fact, it is dedicated to the incorporation of foodstuffs. Finally, the recommended dosage is 15 to 30 g/kg of preparation. This is enough to give your recipes a pleasant fragrance.
