Using vanilla powder
Using vanilla powder in patisserie and chocolate-making
Vanilla is much more than just a spice; it’s an aromatic treasure trove that enriches our culinary creations. Among its many forms, vanilla powder stands out for its practicality and intensity. However, as it is already ground, many people wonder what it contains and how it is obtained. In this article, NOROHY explains all you need to know about vanilla powder: how to choose it and how to use it in patisserie and chocolate-making.
What is vanilla powder?
Be careful, there’s vanilla powder… and there’s vanilla powder! The two are not to be confused.
Exhausted vanilla powder is obtained by grinding the wood of the pod from which the aromas have already been extracted. It can therefore only be used for decoration.
In contrast, powdered vanilla beans are whole, natural vanilla beans. They have never been extracted, so they retain all their aromatic power and richness. Finely ground, they flavour recipes and provide a delicious garnish.
How to choose your vanilla powder?
Don’t be confused between vanilla powder and powdered vanilla beans!
NOROHY offers you very finely ground vanilla pods: less than 50 microns. This makes them easy to incorporate into your appliances. NOROHY guarantees the origin and quality of our natural vanilla beans. These organically grown Planifolia vanilla beans are cultivated, harvested, prepared and refined in Madagascar. They exhale gourmet vanilla flavors with woody notes.
Available in 100 g for individuals or small volumes, discover our vanilla powder pods in 500 g or 15 kg for pastry chefs, ice-cream makers, chocolatiers and restaurateurs.

An ingredient to flavour your desserts & dishes
Vanilla powder is ideal for flavoring your recipes, especially dry pasta. It retains all its aromatic potential without adding water or moisture. There’s no risk of slicing your preparations when you add it!
This makes vanilla powder ideal for macaroons, brioches, pastries, travel cakes, cookies and shortbread. It blends in easily without altering the texture of the pastry, offering woody, vanilla aromas.
An ingredient to decorate your recipes
Vanilla powder can also be used for decoration:
- As a topping: Sprinkle on shortbread or chocolate bonbons for an aesthetic, aromatic touch.
- For flavouring and decoration: Roll truffles in vanilla powder for an exquisite taste and elegant presentation.
- Create patterns: Use the powder to draw patterns on shortbread, adding a visual and taste dimension.
Adding grains to a cream or mousse
Vanilla powder can also be incorporated into creams and mousses. Not only does it add a delicate flavour, but also colourful grains that enrich the texture and appearance of your desserts.
Recommended dosage
It’s important to use the right amount of vanilla powder to balance your recipes.
