FAQ TADOKA vanilla
It’s made from vanilla concentrate (oleoresin), spent vanilla beans and powdered vanilla pods. All combined with cocoa butter to create a solid nugget.
TADOKA vanilla can be added hot (by melting) or cold (by grating) for vanilla flavoring. To do this, add your dose to a hot preparation or melt it beforehand, or grate it to blend its grains into your mass.
NOROHY recommends adding one or two doses of TADOKA vanilla per kilo of preparation.
This ingredient can be used in both sweet and savory recipes, as it contains no sugar.
TADOKA vanilla is a molded ingredient. We imagined an iconic shape for TADOKA, resembling a cut gemstone. Chocolatree designed it, by the way!
TADOKA vanilla contains cocoa butter to facilitate the agglomeration of ingredients and its molding. As a result, it’s easy to measure out and not messy to use.
What’s more, cocoa butter has a neutral taste and melting qualities adapted to the uses of our customers (chocolate, savory, pastry, confectionery, ice cream…).

In a dose of TADOKA, it is normal to observe a color difference in the nugget. This is due to natural decanting during the molding process. Indeed, the heavier vanilla beans settle slightly during the crystallization of the cocoa butter. They can therefore potentially leave a lighter layer of cocoa butter on the heel of TADOKA vanilla.
TADOKA vanilla is made from cocoa butter, so like chocolate, it melts when heated. Its organoleptic profile may be altered by exposure to light or high temperatures.
One sachet contains between 62 and 63 doses. This allows for 31 kg to 62 kg of preparation, depending on the dosage you use. NOROHY recommends 1 to 2 doses per kg of preparation.
Each dose of TADOKA vanilla weighs approximately 4g.
The weight of a vanilla pod varies from one variety to another, as does its size. It is this diversity that makes them so rich. It is therefore difficult to talk in terms of pod equivalents…
We therefore prefer to be more precise: 1 TADOKA VANILLE dose of 4g is equivalent to 1 pod of 3g. However, TADOKA vanilla combines two varieties of vanilla (Planifolia from Madagascar and Tahitensis from Papua New Guinea). As a result, the aromatic complexity offered by TADOKA is richer than a vanilla bean of either origin.
TADOKA VANILLE is a vanilla concentrate for flavoring culinary preparations. Pure use would be too intense. It is therefore not recommended, even if there is no health risk.
TADOKA vanilla contains cocoa butter. This compound starts to melt at 20°C and fully melts at 35-37°C. We recommend incorporating it directly into your hot preparation for ease of use, but you can also melt it in the microwave or in a hot pan for savory applications.
Some prefer to add it cold, by grating it directly on top of the preparation, even at the last minute.
TADOKA vanilla contains cocoa butter, a fat that is solid at room temperature and immiscible with water. Melting TADOKA vanilla is essential to allow the ingredient to disperse and release the vanilla components. We therefore recommend that you melt your dose of TADOKA vanilla in your hot preparation, or grate your dose directly onto your creations using a microplane.

No, TADOKA vanilla contains no allergens. Its composition is limited to oleoresin (vanilla concentrate), spent vanilla beans, vanilla bean powder and cocoa butter. However, TADOKA is manufactured in a facility that uses nuts, egg, soya, gluten and milk.
This ingredient is said to be processed, so it cannot be said to be a natural product. However, it contains no additives or preservatives.
NOROHY strives to offer products with the shortest possible list of ingredients, with no additives, preservatives, flavor enhancers or synthetic flavors. For example, TADOKA vanilla includes only vanilla bean ingredients (powdered vanilla beans, vanilla concentrate, spent vanilla beans) and cocoa butter.
TADOKA vanilla contains cocoa butter, so it should be stored at a temperature of between 16 & 18°C. Preserving it in closed packaging (ideally sealed or closed with a NOROHY clamp) avoids any contact with air or parasitic aromas, thus limiting the risk of aromatic contamination or oxidation. Opaque packaging protects your vanilla doses from light and therefore from oxidation.
Refer to the Best Before Date (BBD) on the packaging to ensure that the product offers optimal organoleptic qualities.
