Vanilla paste is a culinary treasure. It adds a rich, authentic flavor to your dishes. Easy to measure out and incorporate into your recipes, vanilla paste instantly perfumes your creations.

But how do you choose the best one? How do you find your way through the ever-expanding range of vanilla pastes? NOROHY deciphers the labels for you, and tells you which quality criteria to pay attention to.

How to choose your vanilla paste?

Choosing a quality vanilla paste is crucial to enhancing your dishes. Let’s take a look at the quality criteria for vanilla paste.

Origins of vanilla pastes: an aromatic world tour

There are several types of vanilla paste, each with its own distinct aromatic profile. They can be classified by origin. While some vanilla pastes are a blend of different vanillas, NOROHY prefers to offer pure vanilla pastes. This choice ensures an aromatic profile characteristic of a particular region and vanilla variety.

Prioritize the origin of the beans, as this determines the variety and fragrance of the vanilla.

Clean Label vanilla paste: no additives

Look for pasta with a high vanilla content. Avoid those with additives, texturizers or preservatives. Read labels carefully to know what you’re buying. If the list of ingredients doesn’t seem precise or clear, run away!

NOROHY is committed to offering Clean Label recipes: with as few ingredients as possible, no preservatives, texturizers, additives or synthetic flavors.

Appearance and intensity of vanilla paste

To recognize an exceptional vanilla paste, rely on its color and aroma. A well-made vanilla paste should be thick and fragrant. A smooth, thick texture is desirable. The fragrance should be powerful and authentic, without chemical notes.

The weight of vanilla beans needed to make vanilla paste is a key indicator. It determines the intensity of the paste produced, as does the recommended dosage.

comment choisir sa pâte de vanille

Madagascar Bourbon vanilla paste

The vanilla aroma we all have in mind is that of vanillin, the main aromatic molecule in Planifolia vanilla. This species of vanilla is grown mainly in the Indian Ocean islands, particularly Madagascar. In fact, it’s from this region that Bourbon vanilla takes its name!

Bourbon de Madagascar vanilla paste offers typical camphorated and woody notes of Rhum raisin. VANIFUSION, NOROHY’s Madagascar Bourbon vanilla paste fuses all the components of the vanilla pod. Vanilla concentrate (oleoresin extracted from macerated beans) is complemented by the powder of unused vanilla beans. It is this component that gives your preparations a light color and woody notes. Finally, exhausted vanilla beans are added to flatter the eye, with sugar to round things off.

These ingredients are organically grown and come from a Clean Label recipe. This means that no additives, texturizers, synthetic flavors or preservatives are added!

Simply add 5 to 8 g of organic Bourbon vanilla paste per kilo of mass to flavour your recipe!

Tahitian vanilla paste

If you prefer a more floral and original version of vanilla, opt for Tahitian vanilla paste. Notes of almond, tonka bean and aniseed broaden the aromatic palette of your desserts.

NOROHY has captured these gourmet scents in Vanilla x Tahitensis paste. Made from Papua New Guinea vanilla, VANIFUSION Tahitensis is easy to incorporate into your recipes. 5 to 8 g of paste are enough to instantly flavor your recipes. Save time by avoiding splitting, scraping and infusing your vanilla beans!

VANIFUSION Tahitensis is also a Clean Label recipe containing ONLY vanilla in all its forms and sugar.

VAKANA vanilla paste or vanilla beads

If you’re looking for intensity and a sugar-free paste, then opt for NOROHY’s VAKANA. This vanilla bead includes just two ingredients: vanilla oleoresin or concentrate and natural vanilla beans. These non-depleted beans add full flavor and a little crunch to your recipes.

To obtain 500g of vanilla pearl, 1.4kg of vanilla beans are used! This explains the ultra-concentration of this vanilla pearl. That’s why 3g are enough to flavor 1 kilo of pastry.
