Passion by the bay : vanilla passion mocktail
This vanilla passion fruit mocktail is ideal for alcohol-free lovers who want to treat themselves by combining freshness and sweetness.

Mocktail
- B solution 4.5 cl
- Madagascar Vanilla Syrup 3 cl
- Pepper water 4cl
- Passion Foam 3 tbsp
Add all the following ingredients in the shaker with some ice: B Solution, Madagascar Vanilla Syrup,
Pepper water.
Cheers !
Finish: Add Passion Foam Adamance on top. (see below)
B solution (for 1 liter)
- Water 1 L
- Citric Acid SOSA 40 g
- Sugar 60 g
- Bergamot natural flavouring SOSA 10 drops
Add all the ingredients in a container.
Blend it with a whisk or directly in the blender.
Pour the preparation in a bottle.
Conservation: Up to 2 weeks in the fridge.
This solution offers several advantages :

- Transparent solution that maintains the cocktail’s crystal-clear appearance
Passion Foam (for 50g)
- Passion Fruit purée 50 g
- Soy Lecithin SOSA 1,25 g
- Sugar syrup 0,25 g
Blend the mixture until the desired foam texture is achieved.
Madagascar Vanilla Syrup (for 1L)
- Semi-rich syrup 1L
- Organic Bourbon vanilla extract 10 spoons
Pour the sugar into the water in a saucepan and heat the mix up until complete dissolution of the sugar.
Add the vanilla extract to the semi-rich syrup.
Blend it.
Pour the mixture into a bottle.
Tips : Shake the Madagascar Vanilla Extract well before use. This recipe works with either industrial cane sugar syrup or homemade semi-rich syrup (1.5 parts sugar to 1 part water).
