NOROHY recommends adding 20 to 40 g of its organic Madagascar Bourbon extract per kilo of preparation, depending on the intensity required. Aromatization is immediate. Using 20 g gives the same vanillin content as a whole vanilla bean, so you benefit from the complex aromas of this exceptional product. NOROHY selects mature organic vanilla beans that have not been exhausted up to produce its vanilla extract. In all transparency, here’s our recipe: vanilla and cane sugar syrup… Nothing more! Our natural vanilla flavor is obtained by simply macerating the beans in several baths of alcohol. After evaporation, the mixture is decanted and filtered. It is then called vanilla oleoresin. The vanilla beans obtained after extraction are then said to be exhausted: their aromas have been extracted. However, their seeds are added to our extract as visual markers. They add a slight crunch to your preparations. Oleoresin and seeds are then diluted in organic cane sugar syrup to become our extract. In fact, oleoresin cannot be consumed pure, as it is too concentrated and difficult to dose.
Regulations require that the concentration be indicated on the label. NOROHY vanilla extract is 200g/L. This means that 200g of vanilla beans are used to produce 1 liter of vanilla extract. However, legislation does not specify the quality of vanilla beans used. They may therefore be whole beans with their full aromatic potential, or exhausted beans whose aromas have already been extracted. More than the concentration (which can vary from 200 to 400 g/l), pay attention to the quality of the beans used. NOROHY uses ONLY non-exhausted beans of extraction quality for its vanilla extract. As we are certain of the quality of our vanilla, we even guarantee the vanillin concentration at bottling.
Vanillin is the main aromatic compound in Madagascar vanilla planifolia. That’s why we’ve chosen to guarantee the vanillin content of our vanilla extract. This is made possible by our choice of raw materials. Indeed, the beans are carefully selected according to exacting specifications. Moisture content, extraction quality and vanillin content are among the main criteria. To ensure transparency, we indicate the vanillin content on the vanilla extract label.
We’ve done away with all colorants and additives, keeping only the ingredients essential to vanilla extract. In fact, vanilla extract with seeds is conducive to an application rich in markers. We’ve therefore chosen to make the most of exhausted vanilla seeds by adding them to our recipe. This adds visual appeal and a little crunch to your recipes. Also available in 225 ml and 750 ml bottles, this extract is accessible to all.
