Seed-free vanilla extract enables instant flavoring. As it is extracted directly from the vanilla beans, its aromatic complexity is preserved. It also saves considerable time, eliminating the need to split, scrape and infuse the beans. Another advantage is that, unlike infusion, there's no need to heat up the preparation. Finally, its liquid form makes it easy to dose and incorporate.
To make our extract suitable for all applications, it is grain-free. It is dedicated to homogeneous preparations: ganaches, mousses, creams, ice creams… This grain-free vanilla extract is particularly recommended for applications less dense than vanilla grains, in which these markers could remain at the bottom of the mold! Depending on the desired intensity, add 20 to 40 g of organic grain-free vanilla extract per kilo of preparation. The vanilla notes are instantly perceptible.
Using 20 g of organic grain-free Bourbon vanilla extract offers the same vanillin content as a whole vanilla pod. Aromatic complexity is preserved, since the extract is derived from the bean itself, unlike a synthetic flavoring. NOROHY uses mature organic vanilla beans that have not been used up to produce its vanilla extract. As we have nothing to hide, here’s our recipe: vanilla and cane sugar syrup… That’s all! The rest depends on the know-how of our extractor and the quality of our raw materials. What’s the story? Our seed-free vanilla extract is obtained by macerating the vanilla beans in successive baths of alcohol. By evaporation, decantation and filtration, we obtain vanilla oleoresin. The oleoresin is then diluted in organic cane sugar syrup to become our seed-free vanilla extract. In fact, oleoresin could not be consumed due to its very high concentration. It would be too difficult to dose.
Vanillin is the dominant aromatic molecule in Madagascar vanilla planifolia. To ensure that our seed-free extract gives your recipes the characteristic notes of this vanilla, we guarantee a certain vanillin content. Our vanilla beans therefore meet exacting quality criteria (moisture content, extraction quality, vanillin content, etc.). Finally, since our extraction process is controlled, we can guarantee this vanillin content. So, in all transparency, we clearly display this content on every bottle of NOROHY vanilla extract.
At NOROHY, our products contain no colorants or additives. We incorporate only the essential ingredients into our recipes. For example, our grain-free organic vanilla extract contains only organic vanilla extract and organic cane sugar syrup. The latter facilitates the dosage of the extract, which would otherwise be too concentrated.
